3 Gone and 3 New Recipes

OMG! I am losing it. LOL. I am down 3 lbs this week! Go Me!  I am so excited as it has been about two months since I have lost any, and I mean any, weight at all.  I had not gained either, but I was starting to get so frustrated, and was almost ready to just give up.  But those words will not be in my vocabulary any more.  I really paid attention to my eating this week.  I made sure to eat breakfast everyday even if I slept late.  I ate either apples with a tablespoon of peanut butter or veggies with my homemade ranch dip / dressing  for snacks, and I made delicious banana frozen yogurt for dessert.  Yummy!  I also made my own version of lemongrass chicken for dinner last night.  So, since I made so many new and delicious recipes this week, I thought I would share them with you!


1 3/4 Cup Chobani 0% Greek Yogurt

1/4 Cup Fat Free Milk

1 – 1 oz. Packet of Hidden Valley Ranch Dip / Dressing Dry Mix

Put all ingredients in a Mason jar and shake until well blended.  Chill for at least 30 minutes, then enjoy! Makes 16 (2 Tbsp) Servings.

2 Frozen Bananas (I keep these sliced in baggies in the freezer at ALL TIMES)

6 oz Chobani 0% Greek Yogurt

1/4 Cup of Fat Free Milk

Put all ingredients in blender and blend until smooth.  I have a Ninja blender, so this takes about 30 seconds.  Eat up or put in containers and store in the freezer.  If frozen, thaw for a few minutes and stir before eating.  This is so creamy and YUMMY! Makes  4 (4 oz ) servings.

1.5 lbs cubed chicken breast

1 Tbsp Olive Oil

1/4 Cup (or more if you like) Terra Verde Peach Balsamic Vinegar (BEST STUFF ON EARTH, I SWEAR)

2.5 Tbsp Gourmet Garden Lemongrass

1 Tbsp Gourmet Garden Ginger

2 Tbsp Gourmet Garden Garlic

1 Cup Coconut Milk (I use So Delicious Coconut Milk Beverage, it has way less fat and calories)

1 Tbsp Soy Sauce

A squirt or two or three of Sriracha sauce (This stuff is hot so use good judgement on amount)


In a hot wok cook chicken breast in olive oil.  When done, drain chicken.

In a bowl mix the remaining ingredients.  Return the chicken to the wok and add the sauce mixture.  Cook for about 5 minutes.  Serve over jasmine rice and enjoy.  That was so easy! The following nutritional breakdown in an estimate due to the Peach Balsamic Vinegar not having any nutritional information on the label.  I would have to say the carbohydrates would be slightly higher, I substituted balsamic vinegar in the recipe calculation.  Makes 4 servings.

Beautiful Day In Galveston

Today was a wonderful, beautiful day in Galveston, TX.  Princess had the day off from work, so we all piled in the car and headed 20 minutes down the road.  We originally intended to hit some antique shops, but as we walked around we found that several were either no longer in business or were closed on Wednesdays.  I found an awesome shop with lots of  nautical antiques that was closed, but I am going back before my vacation is over!  That was okay though.  We spent about four hours walking around in and out of shops on the Strand, had lunch at Yaga’s, and played some chest on a giant chest board.   We got some great family photos with our cell phones, because I didn’t even think to take the actual camera.  And I just had to play on Picmonkey when I got them downloaded to the computer, lol.  I enjoyed this beautiful blessing of a day so much!

Working It With a Broken Toe

Yes, I am! I am determined to get this weight off so I am working out even with my broken pinky toe.  It still hurts pretty bad, but I refuse to let that which pain medicine helps keep me down.  My kickboxing trainer, Kristin Sommer (owner of Etre Fit in Clear Lake, TX), is so awesome and motivating.  If you live in the area, you should definitely check her out.   She is the 2012 Texas State Gi and No-Gi Brazilian Jiu-Jitsu Women’s Masters Champion in her weight class, and she is an awesome person.

So, I am officially on vacation for the next 10 days.  This means I will be focusing on working out everyday and really working on my eating.  I have several recipes that I am going to make in bulk and divide up into portion sizes and freeze for easy eating.  I believe planning really helps me to succeed.  One of the recipes that I made recently is Oatmeal Chocolate Chip Muffins from Jillian Michael’s Body Revolution nutrition guide.  They aren’t very pretty muffins once cooked, but they are delicious, and filling!

Oatmeal Chocolate Chip Muffins:

Olive oil spray for the muffin pan

1 1/2 c. white whole wheat flour

1 c. rolled oats (not instant)

1 tbsp baking powder

1/2 tsp baking soda

1/2 tsp salt

1/2 tsp ground cinnamon

1/2 c. coconut milk (I used So Delicious brand)

1/3 c. honey

1/4 c. olive oil

1 large egg

zest of 1 orange

1 c. finely chopped walnuts, (toasted)

1/2 c. 70 % cocoa chocolate chips

Preheat oven to 425 degrees. Lightly spray muffin tin with olive oil or line with paper liners.

In a large bowl, whisk together your dry ingredients.  In another bowl whisk together the wet ingredients including the orange zest.  Add the wet ingredients to the dry  and stir just until moistened.  Fold in the walnuts and chocolate chips.

Spoon into the prepared muffin tin.  Place muffin tin in the oven and REDUCE the temperature to 400 degrees.  Bake 18-20 minutes.  Let cool for 5 minutes before unmolding from the muffin tin.  Serve warm or freeze for quick on the go breakfast! Will last 3 days in an airtight container at room temperature or 2 months in the freezer.

I know what your thinking, one muffin for breakfast? Believe me, they are very filling and keep you full for hours especially if your drinking your water!

A journey has to start somewhere!

Hey there!

My name is Toye, and I want to welcome you to my new blog.  I will be tracking my weight loss journey here, including my current workouts, recipes, information I find on nutrition, and my many thoughts on the subjects.  I will let you know what I think about all of these things, good and bad, because I am a pretty blunt person and not very shy or modest.  I love to laugh a lot, spend time with my dear husband and my very active ADD (21) / ADHD (11)  children.   I am an EKG Technician by day, really by weekend as I only work Friday through Sunday.  Not to bad of a gig, if you ask me.

In January of this year I went back to college to start working toward my nursing degree.  I signed up for a Kickboxing for Fitness class as a way to force myself to start exercising.  I figured if I had to pay for it, couldn’t miss class without loosing points off my grade, and had others there to hold me accountable I would maybe actually stick with it.  Well, I was addicted after about three weeks into the course.  I had a great coach who was about my age and even though the class was not my age on average (38 years young), it had some wonderful ladies that were very encouraging.  I was the oldest and heaviest woman in the class, but felt very comfortable surprisingly. Oh, by the way I made an “A” in the class. Go me!

My son, we’ll call him Stud Muffin In the Making (Stud for short), currently holds a white and yellow belt with  4 white stripes in Brazilian Jujitsu.  While I was taking my classes on Mondays and Wednesdays, I was sitting on my big behind watching him workout on Tuesdays and Thursdays.  At the same time as his classe was a Kickboxing class on the other mat.  I would sit there every Tuesday and Thursday thinking I should be working out.  I was already addicted to Kickboxing and loved the feeling it gave me when I would hit and kick the bags really hard.  I loved learning what a jab, cross, straight, roundhouse, switch kick, front kick, etc. were.  I loved that when my husband and son would watch UFC I could actually keep up with what was going on. I would yell out, “Oh, Oh that’s a ……”.  So logically I signed up for that class for a year.  Under contract. No going back now, lol.

So here we are.  My college classes are over and now I am down to working out two days a week from four.  So what to do?  Order Jillian Michael’s new Body Revolution 13 week workout dvd set of course!  I started on Tuesday with phase 1 disc 1 in the morning and Kickboxing at Gracie Barra in the evening.  Wednesday was phase 1 disc 2 in the morning.  I was going to hit this hard and get the weight off.  Yeah right.  Wednesday afternoon my dear hubby and I went to another MMA gym looking to buy some MMA shorts for Stud’s upcoming No Gi competition.   We get out of the car, and with me leading the charge, I open the door and break my pinky toe.  Yes, you read that right.  The door caught my pinky toe and next thing I know it’s at a 90 degree angle from its original position.  I don’t know if it was shock or what, but I just leaned down and moved it back in place.  I know, ouch right? Nope.  It didn’t really click for about 5 minutes, until it started hurting… badly!  So needless to say there will be no kickboxing for a few weeks if my doctor has anything to say about it.

But I can’t just stop working out! So my plan is to do abs, I love ab workouts, and anything that does not require me putting all my weight on my left foot. So, raise your glasses ladies and let’s have a toast to this new journey! Cheers! I hope you will stay around, stalk me and keep me company while I work hard on becoming a “Hot Ginger”!
